This dessert has been popular for hundreds of years, and it’s believed to have originated in Morocco. Alice B. Toklas is believed to be the first to mention this recipe in her famous 1954 cookbook.
Creating a fluffy cake containing the psychoactive properties of cannabis is an ingenious solution for people who can’t smoke it for various reasons (especially for health issues). In 1974, waitress Mary Jane Rathbun and LGBT rights activist Dennis Peron were arrested for distributing therapeutic cakes to AIDS patients (as cannabis has been proven to help reduce the nausea and appetite loss caused by this disease).
Nowadays, cannabis cake has seen the cannabis edible industry grow around it, with the cannabis cake recipe being modernized as well.
What are the effects of a cannabis cake?
Consuming cannabis orally is the second oldest method of introducing cannabis into the body, and has specific characteristics that should be taken into consideration:
- This consumption method doubles the usual potency of the flowers due to the breakdown of the chemical elements of cannabis by the stomach and liver.
- The effect can last longer than usual, between 4 and 6 hours.

Vegan Cake: Cannabis Flour and Terpene Frosting
Our cannabis cake recipe is definitely the best for several reasons:

- It doesn’t contain any products derived from animal suffering, so it’s suitable for vegetarians and vegans.
- It can be served alone or paired with a magnificent glaze made with exquisite terpenes from Cali Terpenes, adding a new dimension of nuances and aromas. The addition of these terpenes does not produce any psychoactive effects.
THC Decarboxylation: How to Make Cannabis Flour
The decarboxylation process transforms cannabis molecules in their acidic state (THCA and CBDA) into their psychoactive counterparts (THC and CBD) through heat and, to a lesser extent, oxidation.

This process occurs instantaneously when cannabis is consumed either by combustion or vaporization, as cannabinoids are exposed to a certain temperature. Therefore, in cannabis cooking, you must always ensure the decarboxylation process takes place if you want to get a psychoactive effect.
Decarboxylation is a simple chemical process that only requires a tray and an oven preheated to 115ºC. By applying heat, the cannabis components change from their non-psychoactive acidic state (THCA – CBDA) to their psychoactive state (THC – CBD). This is why chewing raw flowers doesn’t produce the usual effects.
- Place some parchment paper on a tray and spread out the chopped flowers. Avoid using stems and large leaves, but the small leaves from around the buds can be used. Place the tray in a preheated oven.
- Bake for 40 minutes, turning the cannabis flowers every 10 min.
- Remove the cannabis and let it cool.
- Place in a food processor and grind until you get a fine dark green powder. This ground cannabis powder is mixed with flour to create what’s known as “green flour.”
- When stored in the right conditions, green flour can be stored for up to two months. Be careful not to let it spoil or grow mold.
- There are two different trends for storage: one says to keep it separate from regular flour until use, and another suggests mixing it with regular flour for better preservation.
- A 2:1 flour/cannabis flour ratio is usually used, though it’s recommended not to use more than ¼ cannabis flour in the total recipe, as it could turn out to be too potent.

Ingredients
For the vegan cake:
- 285 g regular flour
- No more than 15 g decarboxylated cannabis (depending on user tolerance, adjust the amount downwards, calculating no more than 1 g per person)
- 120 g sugar
- 100 g extra virgin olive oil
- 125 g natural plant-based yogurt
- 125 g soy milk
- 20 g lemon juice
- Zest of 1 lemon
- 16 g baking powder
For the glaze:
- 400 g icing sugar
- 200 g plant-based margarine
- 3 – 4 drops of Cali Terpenes’ Lemon Cookies food flavoring
- 2 tablespoons lemon juice
- 2 tablespoons soy milk
Vegan Cannabis Cake Recipe
- Preheat oven to 180°C.
- Add flour, baking powder, and sugar to a bowl, and whisk together.
- Add the remaining ingredients and whisk until a homogeneous batter is obtained.
- Grease an 18 cm round mold (the larger the mold, the thinner the cake will be). Pour the batter into the mold and bake at 180°C (top and bottom heating without fan) for approximately 45 minutes or until a toothpick comes out dry (do not remove the cake from the oven until you’ve checked with the toothpick).
- Remove the cake from the oven and let it cool before unmolding.

At this point, you can either add or skip the terpene glaze. Although this is optional, it certainly adds an interesting touch. The terpene profile should be added to the cake when cold, as heat would spoil its nuances.
Vegan Terpene Glaze Preparation
- Beat the margarine until smooth.
- Slowly add the sifted icing sugar, constantly beating the mix.
- Add Cali Terpenes’ Lemon Cookies drops (or use a different strain if you prefer) and lemon juice. Beat well.
- Add the plant-based milk until you obtain the desired consistency.
- Continue beating until everything is well mixed into a smooth and consistent sauce.
- The drizzle is now ready to be poured over the cake. Let it cool and solidify.
